Dressing
- ⅓ Cup Olive Oil
- ¼ Cup White Balsamic Vinegar
- 1 TBSP Honey
- 1 TSP Italian Seasoning Mix
- ½ TSP Salt
Asparagus
- 1 Lb Fresh Asparagus Washed and trimmed
- 1/2 Cup Grape Tomatoes** Halved
Optional
- crumbled feta cheese
- chopped nuts
- fresh herbs
Asparagus
Begin by washing and trimming the asparagus spears. Snap off the tough ends and discard. Be sure to trim off enough to fit in the Cool & Serve Bowl.
Bring 2" water to boil in the steamer.
Add the asparagus to the basket and place in steamer, making sure the asparagus does not sit in the water.
Cover and steam 3-5 minutes, or until crisp-tender. Be careful not to overcook.
While the asparagus is cooking, prepare an ice bath in a large bowl by filling it with ice water.
Once the asparagus is cooked, immediately transfer it to the ice bath to stop the cooking process and preserve its vibrant green color. Let it chill for a few minutes, then drain and pat dry.
Add asparagus to the Cool & Serve Bowl layering with scattered halved grape tomatoes.
If desired, sprinkle with crumbled feta cheese, chopped nuts, or fresh herbs for added flavor and texture.
Add the dressing and give the bowl a little shake to make sure all the asparagus is coated.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
When ready to serve, give the salad a gentle toss to redistribute the dressing. Serve chilled and enjoy the refreshing burst of flavors!
**When selecting tomatoes for this dish, opt for firm, ripe ones. Softer tomatoes tend to become mushy as the dish marinates.
